Cinco De Mayo Dinner
White Sauce Steak Enchilada's
1-2 tablespoons of butter, melted in fry pan
1 large onion, chopped fine
1 tablespoon minced garlic
2 tablespoons of flour
1 (1 1/2) cup/s chicken broth
1 cup sour cream
2 cans , 4 ounces of chopped green chilies
1/4 teaspoon salt
1/4 teaspoon garlic pepper
1/4 teaspoon ground cumin
12 medium flour tortilla's
2 cup's of cooked steak (or tri tip), cut into small bite size pieces
2 cups jack cheese, shredded
3-4 stalks of green onions, sliced
Cook and blend together:
Saute': onions, butter, garlic; saute' until caramelized
Place onion mixture into a sauce pan and add;
chicken broth,
sour cream,
flour,
green chili's and seasonings
Blending together over medium heat.
Place meat and cheese inside of the tortilla and roll closed.
Place 1/2 of the sauce in the bottom of a 9x13 greased pan. Then place the tortilla's, with the meat mixture rolled inside, in the pan. *See picture above.
Pour the remaining sauce over the top of the enchilada's.
Bake in the oven at 350 degrees for 20-30 minutes. Garnish with green onions, tomatoes and/or chili's. Oh...this is delish!!!
Guacamole
3 avocado's; peel, pit and mash in a large bowl.
Add juice of one lime and blend well.
Fold in:
1 teaspoon of salt,
1/2 cup of chopped fine onion,
2 tablespoons cilantro (fresh or prepared)
1 teaspoon of minced garlic,
2 Roma potatoes, seeded ans cut into small pieces,
1 pinch of ground cayenne pepper.
Mash and mix all ingredients together, blending well.
Chill covered in the refrigerator for at least 2 hours before serving.
Garnish Enchilada's with Guacamole and/or sour cream and serve.
Bloody Maria's
4 cups of Mr & Mrs T's bloody Mary mix, extra spicy
1 tablespoon each of lemon & lime juice
1 tablespoon horseradish, prepared
1 tablespoon Worcestershire sauce
1 teaspoon minced garlic
1 1/2 teaspoon chipolte Tabasco sauce
1/2 teaspoon garlic pepper or Worcestershire pepper
3/4 of celery salt
Mix well and Chill

To make Drinks:
Optional: Rim glass with a lemon or lime wedge and dip in salt
(or a chili salt combo)
Add ice to a cocktail glass,
Add 1 ounce of Tequila ( *I use Patron Silver)
Fill glass with cold Bloody Mary/Maria Mix
Garnish with: Celery, olives, onions, asparagus, green beans or green onion
Serve with the above Menu
Bloody Maria: made w/ tequila
Bloody Mary: made w/vodka
Bloody Shame: No alcohol
